Surprise your favourites with these beautifully layered almond and matcha cupcakes. They're raw and vegan-friendly.

Raw Vegan Matcha Cupcakes


Ingredients

Almond Layer

1 cup almond flour
4 tbsp maple syrup
2 tbsp melted coconut oil
¼ tsp vanilla
pinch of salt

Matcha Layer

1 cup cashews, soaked and drained
3 tbsp maple suryp
juice of half lemon
1 tsp My Matcha Fix certified organic matcha
⅓ cup coconut milk
1 tbsp coconut oil

Directions

Almond Layer

Combine all the ingredients in a bowl, first with a spoon, then knead it with your hands to form the dough. Divine in 6 parts and press into muffin tins.

Matcha Layer

Blend all the ingredients until smooth and creamy, pour it to each muffin form over your almond base and place in the freezer. Freeze until firm, 3-4 hours or overnight.
