Matcha Truffle Balls


Ingredients

1 cup cashews, soaked in boiling water for 15 mins
7 medjool dates, pitted
2 tbsp rice malt syrup
1 heaped tbsp My Matcha Fix certified organic matcha
1 tbsp almond butter
1 tbsp coconut oil, melted
1 tbsp shredded coconut

Directions

Drain the cashews. Combine all ingredients in a high speed blender or food processor and pulse until mixture comes together to form a smooth sticky dough. Roll into balls and dust with a little extra of the matcha powder. Set in the fridge.
